It has been awhile since I posted anything having to do with food! To be honest... I do not love the kitchen in this rental house and rarely cook anything other than the basics... we are eating out more than usual.
But... I've been craving meatballs lately and last night I broke down and made some. When you think of meatballs, think of a little round meatloaf. Basically anything you'd make meatloaf outta... you can do a meatball outta too. These are pretty basic and easy to make... and OH SO GOOD!
2 lbs Ground Chicken Breast
2 Eggs
1/2 to 3/4 c Seasoned Bread Crumbs
Cumin
Garlic and Herb seasoning
Rosemary
Fresh minced Garlic
I'm not the measuring sort of Gal... So...
just get a bowl, put in the Chicken, Eggs,
and bread crumbs... then add whatever
amounts of each of the seasonings that you
want. I use less Cumin than everything
else because a little goes a long way and
it has that great smoky flavor!
Use your hands and mix it all together...
then start rolling the meatballs.
I put the balls in a 9x13 pan (that I had coated with PAM) and when I'd used all my chicken mixture, I poured a 15oz can of Hunt's Tomato Sauce over the tops of the balls, and around the edges of the pan.
Cover with foil and bake in a 375 degree oven for about an hour.
We had meatball subs for dinner! I just put some meatballs in the rolls, added some shredded cheese to the top, and popped them back in the oven for a few minutes to melt the cheese and crisp the bread. Then I put a little of the sauce on the top after I took them out of the oven.
Don't they look D-lish?! My kiddos thought so!!
